Hand forged after drop forged K Sabatier 13" carbon steel Ideal pattern chef knife made in Thiers from approximately the 1950s to 70s with a newly made custom handle done in an orange-brown vintage Westinghouse micarta with G10 spacers and pins.
A substantial feeling knife with a heavy heel and a somewhat thinner front half of the blade.
Blade is mostly straight, in keeping with this style of work, it should be noted there is a slight wave towards the tip but the point lines up with the heel, it does not point elsewhere than the midline of the knife.
